Instructions
Boil eggs.
After the eggs are boiled and cool enough to handle, peel them carefully. Cut vertically. Carefully remove the yokes, placing them in a bowl while plating the whites on your dish of choice.
Mix together the mayo, diced jalapenos, and salt.
If you are using a piping bag to put the filling into the white, keep a toothpick near. The diced jalapenos can sometimes cause the filing to not flow out properly. The toothpick is used to slide in the tip and rotate those jalapenos around or pull them out.

Here's how I boil and peel my eggs each time:
First, bring water to a boil with one teaspoon of white distilled vinegar.
Once the water has come to a boil, carefully add in the eggs. Be careful not to crack them and make sure they are not already cracked.
Boil for 15 minutes.
After the 15 minutes of boiling, carefully remove the pot from the stove. Pour off the hot water. Sit the pot in the sink and allow cold water to run on the eggs. You can also the eggs to a bowl and pour ice water on them. Allow the eggs to sit in the cold water for about 5 minutes.
Pour water off of the eggs.
Peel the eggs.
Cut them in half vertically (up and down. Not left to right unless you cut a little of the edge of each egg so they could sit stable if you choose to cut them horizontally).
