My Experience During My Raw Vegan Challenge in June

As the end of June approaches, I want to share some of my experiences during my Raw Vegan Challenge. I am really grateful for this experience. I wanted to challenge myself to continue my focus on eating healthier and mindfully. I typically am not a fast eater, though I’ve definitely had moments of eating a bit fast . . . especially if the food is good! LOL!!!!! I take my time, even more, to mindfully focus on each bite.

After a few weeks of eating only raw vegan, I had salmon for two days in a row. I ordered salmon from a restaurant I had been wanting to try, however, if you’re craving salmon, you can try my Easy Under 20 Minute Baked salmon. It’s delicious! I resumed my raw vegan eating afterward. The other day, I chose a meal that wasn’t raw vegan, but I am now back juicing and ready to continue.

There are some things that I want to continue even after the raw vegan challenge. I have always enjoyed juicing. Sometimes I get juices from my favorite juice shop throughout the month, however, this raw vegan challenge has inspired me to start each day with a juice even after the challenge. Raw vegan consists of fruits, vegetables, nuts, and seeds. I didn’t expect to be inspired as a recipe developer. I am absolutely inspired. I developed oil-free dressings that taste soooo delicious! Of course, I will still create dressings with oil, but I am so happy that I challenged myself with new recipes. I am inspired to use natural sweeteners a lot more. I already love farmer’s markets and using seasonal fruits and vegetables. I am even more inspired to share more of those types of dishes on Love, Jane.

I’m thinking about eventually resuming my Wellness For 21 (and beyond) challenge. If you’d like to join, please let me know. Thank you for visiting Love, Jane. I do not take it for granted. Little by little, my readership is rising. I look forward to when you all comment on the blog posts. Lol. I was told to just continue doing what I’m doing. That part will come. It takes time for some to get comfortable enough to post on a website. I’m patiently waiting. I am enjoying this so much.
