Blueberry Muffins with a Streusel Topping

Many years ago, I used to visit a bakery a number of times throughout the week for this very reason right here! Blueberry muffins! Lol! Their blueberry muffins were sooo good. The bakery’s muffin didn’t have the streusel topping though. It was bakery-style with a big dome top. One of the things I loved so much about it was the crispy dome. But, as soon as I bit through that crunchy dome, there was the moist, tender interior. The juicy, delicious blueberries burst with every bite.

Now, here is a blueberry muffin recipe with streusel topping. It is moist, with a tender crumb, and a great balance of blueberries. It’s topped with delicious streusel. 

This recipe makes 12-15 muffins.

Ingredients

STREUSEL TOPPING

  • c light brown sugar
  • 3 tbsp all-purpose flour
  • ¼ tsp cinnamon
  • ¼ tsp salt
  • tbsp butter (cold)

BLUEBERRY MUFFINS

  • 12 oz all-purpose
  • 6.5 oz sugar
  • 1 oz light brown sugar
  • 0.8 oz baking powder
  • 1.5 oz salt
  • 2 eggs
  • 8 oz milk
  • 1 tsp vanilla
  • 5 oz butter (melted) (10 tbsp)
  • 5 oz blueberries (fresh or frozen)

Instructions

STREUSEL TOPPING

  • Mix all of the ingredients together making sure the butter is crumbled in.

BLUEBERRY MUFFINS

  • Preheat the oven to 350 degrees. Prepare the muffin tins with muffin/cupcake liners.
  • Sift all of the dry ingredients together.
  • Mix the eggs, milk, and vanilla together.
  • Add the wet ingredients to the dry ingredients.
  • Stir in the melted butter.
  • Fold in the blueberries.
  • Scoop the batter into the muffin line, about 3/4 or slightly more.
  • Sprinkle the streusel topping over the batter.
  • Bake for 18-20 minutes.
