Cajun Baked Catfish

Catfish is one of my favorite kinds of seafood. It’s a southern staple and there are many ways to prepare it. I enjoy fried catfish, however, when I am craving catfish and I want to eat healthier, this cajun catfish is the answer. It doesn’t require a lot of time to cook at all. In just around 30 minutes you can have delicious, moist baked catfish that is fully loaded with amazing flavors. It’s a delicious meal that’s quick and easy. You can pair this dish with so many other amazing foods like sweet potato mash which I absolutely love. A baked sweet potato or roasted broccoli would be amazing as well. You can also put this cajun catfish over a salad and wow! So delicious!

Ingredients

  • 4 medium catfish fillets
  • 8 lemon slices (optional)
  • 1 tbsp olive oil

CAJUN SPICE

  • tsp salt
  • 1 tsp black pepper
  • ½ tsp cayenne pepper
  • 1 tsp smoked paprika
  • 1 tsp chipotle pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 tsp white granulated sugar
  • 1 tsp red pepper flakes
  • 1 tsp parsley flakes

Instructions

  • Preheat oven to 350 degrees.
  • Combine the cajun spices together. Set aside.
  • Prepare a baking dish with parchment paper.
  • Clean the catfish fillets and pat them dry with paper towels.
  • Drizzle both sides of the catfish fillets with olive oil.
  • Sprinkle both sides of the catfish fillets with cajun spice.
  • Rub to ensure both sides are evenly coated with seasoning.
  • Slice a lemon into 8 round slices.
  • Place the catfish fillets on the baking dish in an even layer. Place each fillet on top of 2 lemon slices. You can skip this step if you choose.
  • Put in the oven and bake for 15-18 minutes or until well done.
  • Enjoy!

Notes

OH YEAH . . . Before I forget: If your catfish is cold, allow it to come to room temperature before baking. You want it to cook evenly. About 15 minutes out of the refrigerator should be fine.
