Catfish is one of my favorite kinds of seafood. It’s a southern staple and there are many ways to prepare it. I enjoy fried catfish, however, when I am craving catfish and I want to eat healthier, this cajun catfish is the answer. It doesn’t require a lot of time to cook at all. In just around 30 minutes you can have delicious, moist baked catfish that is fully loaded with amazing flavors. It’s a delicious meal that’s quick and easy. You can pair this dish with so many other amazing foods like sweet potato mash which I absolutely love. A baked sweet potato or roasted broccoli would be amazing as well. You can also put this cajun catfish over a salad and wow! So delicious!
Clean the catfish fillets and pat them dry with paper towels.
Drizzle both sides of the catfish fillets with olive oil.
Sprinkle both sides of the catfish fillets with cajun spice.
Rub to ensure both sides are evenly coated with seasoning.
Slice a lemon into 8 round slices.
Place the catfish fillets on the baking dish in an even layer. Place each fillet on top of 2 lemon slices. You can skip this step if you choose.
Put in the oven and bake for 15-18 minutes or until well done.

OH YEAH . . . Before I forget: If your catfish is cold, allow it to come to room temperature before baking. You want it to cook evenly. About 15 minutes out of the refrigerator should be fine.
