Easy Pan-Seared Salmon with Lemon Garlic Sauce

I love this salmon recipe! It’s delicious and quick to prepare. For the full experience of this entire dish, make the garlic kale also. Green beans and sauteed spinach are good options also. The Pommes Puree recipe is coming soon, but for now, make creamy mashed potatoes.

On Love, Jane, all my recipes are easy, approachable, and delicious. This pan-seared salmon is super easy to make, yet the flavors taste so elevated. It’s most certainly a culinary delight. The outside is crisp and the inside is moist and flaky.

Type of Salmon: I use skinless, boneless Atlantic salmon.

For the Crisp Exterior: To get the outside of the salmon crisp, pat the salmon dry before sprinkling it with salt and pepper. The butter has levels of flavor that are going to complement the salmon. I use salted butter, and salt in the sauce. For this reason, go very easy on salt when sprinkling on the salmon.

Ingredients: I use extra virgin olive oil, coarse kosher salt, and coarse black pepper for step one. Step one is getting the crisp exterior. Before I begin step one, I combine all of the lemon garlic sauce ingredients into a saucepan. I start by melting the butter first, then turning the heat off. The goal is only to melt the butter and combine the remaining sauce ingredients at this point – not to simmer or cook the sauce. It will simmer with the salmon.

The Crisp Exterior: The salmon has to be dry to get a crisp exterior. Turn the skillet on medium-high heat to let the oil get hot. Place the salmon presentation-side down, not moving for about 5 minutes to get the golden brown and crisp exterior. Carefully flip the salmon. Reduce the heat. Sear for 2 minutes and remove from skillet. Pour any remaining olive oil out of the skillet, but do not clean the skillet. Whatever is left in the skillet from the searing will be used to deglaze. Whisk in the lemon garlic sauce. Add the salmon back to the skillet for another minute or so. Baste the salmon with lemon garlic sauce. Well-done salmon has an internal temperature of 145 degrees.

Plate the salmon over mashed potatoes or pair it with your choice of sides.
