Oatmeal Raisin Cookies

I am excited about this recipe. These oatmeal raisin cookies are so soft and chewy. They are now my husband, Kendrick’s favorite cookie. There is cream cheese in this recipe. It adds moisture and an extra layer of flavor. Making cookies is so much fun to do with my children. They love it! We had so much fun making our Lofthouse-Inspired Sugar cookies. Ingredients

DRY INGREDIENTS

  • 2 c all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp salt

WET INGREDIENTS

  • stick butter (room temperature)
  • c white granulated sugar
  • ¾ c light brown sugar
  • 1 egg and 1 egg yolk (room temperature)
  • 1 tsp vanilla
  • 4 oz cream cheese (softened)

OTHER INGREDIENTS

  • 2 c oatmeal
  • c raisins

Instructions

  • Preheat the oven to 350 degrees.
  • Mix all of the dry ingredients together. Set aside.
  • Mix the butter and sugars together. Stir in the egg and egg yolk, one at a time.
  • Add in the vanilla.
  • Add in the cream cheese.
  • Add the dry ingredients to the wet ingredients. Mix together thoroughly.
  • Fold in the oatmeal and raisins until just combined.
  • Spray a cookie sheet with nonstick spray or line it with parchment paper. Scoop medium sized (or desired size) scoops onto a cookie sheet. Line in an even layer about 2 1/2 inches apart.
  • Bake for 12 minutes or until fully baked. Baking times will vary depending on the size of the cookies.
  • Enjoy!
